Recipe of the Week: Maple Teriyaki Salmon

I received this recipe from my friend Melissa at MOPS.

We ate this salmon so fast I didn't even get a chance to take a picture. It was REALLY good!

1/3 c. apple juice
3 T. soy sauce
2 garlic cloves minced
1/3 c. maple syrup
2 T finely chopped onion (optional)
4 salmon fillets (2 lbs) (I have several fillets in the freezer for when Jeremy caught them in the Fall)

Combine first 5 ingredients. Remove 1/2 c for basting. Cover and refrigerate. Pour the rest into a large Ziploc bag, add salmon and refrigerate 1-3 hours. Drain and discard marinade. Broil salmon about 5 min. Baste. Broil 10 min longer until fish flakes easily with a fork, basting frequently.

Enjoy with rice and steamed veggies.
